Top 6: Healthy Snacks To Try

I love food. Like, so much. It's to the point where if I see something appetizing, I will eat it guilt free. Now that we are heading towards spring weather, I want to get in better shape by working out more and eating healthier. We will see how long this lasts. (I am very tempted by high-calorie sweets.)

I've come up with a small list of tasty, healthy, and quick snacks for mid-afternoon. I always get super hungry after school and ruin my dinner by eating unfulfilling crap, so these snacks are awesome for holding me over without overloading on the sugar, fat, and calories.

1. Cheesy Jalapeno Popcorn

Popcorn is literally the most awesome snack because it's healthier than most snacks and it tastes so good. You can have like a million pieces of popcorn and not taken in many fatty calories. While the bag brands take less than two minutes to pop in the microwave, taking a few extra minutes making your own will save you calories in the long run. You can buy unpopped kernels at most grocery stores, so the ingredients are easy find. There are many low-calorie seasonings offered as well, so getting Jalapeno, Cheese, or Barbecued flavors are easy to come by. Sometimes I just add Grated Parmesan cheese on top of my popcorn, making for a delicious treat.
      For Homemade Popcorn:
1 cup of unpopped kernels
6 tablespoons of Vegetable oil
1 teaspoon Sea Salt or Popcorn Flavoring (I like Kernel Season's)

1. Put kernels and oil in a pot or pan with a lid on medium heat on the stove
2. Keep the kernels covered, checking for popped kernels.
3. Shake the pan after popping starts for about 3 minutes (or until it is all popped)
4. Take popcorn off the heat and sprinkle the sea salt or seasoning.

2. Baked Egg in Avocado

This is kind of a breakfast-y type snack, but hey, it's full of protein, low on sugar, and heart healthy! You can add different toppings like hot sauce, salsa, or other fresh herbs to put a different twist on a great snack. This one takes a little longer to cook, but it's totally worth it.
For The Baked Egg in Avocado:
1 ripe avocado
2 fresh eggs
1/8 of a teaspoon of pepper
1/2 a tablespoon of chopped chives (optional)

1. Preheat the oven to 425 degrees
2. Slice the avocados in half and scoop out the pits and 2 tablespoons of avocado from the center to make room for the egg.
3. Place the avocado halves in a small baking dish and crack an egg in each half.
4. Place in the oven for 15 to 20 minutes, depending on the size of your eggs and avocados.
5. Remove them from the oven, season with pepper and a garnish of your choice.

3. Spinach Balls

This is an awesome snack for spinach and pizza lovers. It's like a spinach pizza rolled into a ball, but it's healthy. These are the most time consuming of this list, but they are oh so delicious; my mouth is watering just thinking about them.
For Spinach Balls:
(5 servings)
1 egg
3 finely diced, deseeded red chilis
1/2 cup of breadcrumbs
1/4 cup of cheese (Parmesan, Mozzarella, and Cheddar mix)
1 cup of spinach boiled in salted water, drained

1. Blanch the spinach for about 1 minute in salted water and totally drain it by squeezing.
2. Put all the ingredients in a bowl and mix well.
3. roll the mix into golf ball sized balls and place on parchment paper.
4. Bake at 350 degrees for 25-30 minutes, or until lightly brown and crispy. Serve immediately.

5. Apples In A Bag

I've always been a fan of apple pie and apple crisp growing up so finding a healthy recipe for yummy apples was heaven. These are literally so easy to make and so heavenly that you forget that they are actually healthy. These have become my staple for afternoon snacking. They are just so good.
For Apples In A Bag:
1 small apple
1 spoonful of sugar
1/4 of a teaspoon of cinnamon
1/4 of a teaspoon of cornstarch
1 tablespoon of water

1. Peel, core, slice, or dice the apple. Pick whatever way you like it best. Place the apples in a zippered plastic bag with the other ingredients.
2. Secure the bag tightly and shake vigorously to evenly coat the apples and mix the ingredients.
3. Open the bag a little to allow for ventilation and microwave on high for 2 minutes.
4. Carefully open the bag and either pour over pita chips, oatmeal, ice cream or eat it alone.

Oven Baked Zucchini Chips. Looks divine!
6. Oven Baked Zucchini Chips

I love chips and I hate zucchini. But I'm seriously in love with this healthy alternative to potato chips. They are so addicting! They taste very similar to regular chips, but have a very unique flavor thanks to the zucchini. I normally don't like squashes and squash-type dishes, but these chips are so good. They are definitely worth a try.
For Zucchini Chips:
1 zucchini, cut into 1/8-1/4 inch slices
1/3 of a cup of whole grain breadcrumbs
1/4 of a cup of finely grated Parmesan cheese
1/4 of a teaspoon of black pepper
Sea Salt, to taste
1/8 of a teaspoon of garlic powder
1/8 of a teaspoon of cayenne pepper
3 tablespoons of low-fat milk

1. Preheat the oven to 425 degrees.
2.Combine the breadcrumbs, Parmesan cheese, black pepper, salt, garlic powder, and cayenne pepper into a mixing bowl.
3. Dip zucchini slices into milk and then cover with bread crumbs mix, coating both sides.
4. Put zucchini on a non stick cookie sheet with sprayed with cooking spray
5. Bake for 15 minutes and then turn them over and continue baking for 10-15 minutes, or until golden brown.
6. Allow to cool to room temperature and place in an airtight, resealable container.

I hope you enjoy these healthy, tasty treats! Some are more time-consuming than others, but they are all delicious in their own right. Let me know how your snacks came out!
