Top 6: Superbowl Snacks

Hello! For today, I have a special treat: awesome Superbowl snacks! Unfortunately, my home team is not playing this year, but my family and I are still celebrating the day with delicious foods. To those of you Broncos and Seahawks fans . . . enjoy your game with these tasty treats.

1. Cream Cheese and Salsa Dip



1 8-ounce package light cream cheese, softened
1 8-ounce jar salsa
1 8-ounce bag reduced fat Mexican blend shredded cheese


In a shallow microwave safe baking dish, spread softened cream cheese on the bottom. Top with salsa. Sprinkle cheese over salsa. Microwave on high for 2-3 minutes, or until cheese is melted. Garnish with black olives, tomatoes, scallions, or avocados. Serve immediately with tortilla chips

2. Buffalo Chicken Nachos

Buffalo Chicken Nachos Recipe

4 cups shredded deli rotisserie chicken
¾ cup Buffalo wing sauce
1 bag (18 oz) restaurant-style tortilla chips
3 cups shredded mozzarella cheese (12 oz)
½ cup finely chopped celery
1 cup crumbled blue cheese (4 oz)

1.       Heat oven to 350°F. In large bowl, toss chicken and 1/2 cup of the wing sauce to coat.
2.       Spray two large (14-inch) pizza pans with cooking spray. Arrange half of the tortilla chips on one pizza pan; top with 2 cups of the chicken and 1 1/2 cups of the mozzarella cheese. Repeat on second pizza pan.
3.       Bake 8 to 10 minutes or until cheese is melted. Top each pan with celery and blue cheese; drizzle with remaining 1/4 cup wing sauce.

4.       To serve; slide one pan of nachos off onto other pan to make one large mound of nachos. Serve immediately.

3. Queso Blanco Dip

Tbsp. canola oil
1/2 cup diced white onion (about half a small onion)
2 jalapeno peppers, diced 
{i say leave all the seeds in, you'll need em for flavor unless you are using pepper jack.}
3/4 cup half and half {or milk, if you don't have it}
1 pound (16 oz.) white American cheese, thinly sliced or shredded
4 oz. Pepper Jack or Monterrey Jack cheese, thinly sliced or shredded
2 cups fresh baby spinach, roughly chopped
1/2 cup fresh cilantro, chopped
salt & white pepper to taste
{i like white pepper for things like this cause it's not harsh like black, and for the obvious reason of black specs in my pretty white dip...uncool}.

1.       heat up the oil in a large sauce pan on med-hi heat.
2.       add onion and jalapeno. 
3.       cook until pretty soft, and even a little carmelizedish. add half-n-half and reduce heat to low.
4.       layer your strips or shredded cheese gradually and keep it moving until all of the cheese is melted.

5.       add spinach, cilantro, and salt & white pepper to taste.  if you need more heat, add crushed red pepper, or even a few hits of tapatio. {then just plan on using pepper jack and more jalapeno next time!}

4. Deep Dish Pizza Bites

Deep Dish Pizza Bites*  No brainer. Winner, winner * You can add some chopped green chilies. You really will Think Pizza.

1 can Pillsbury Pizza Dough
1/2 cup pizza sauce
24 pieces pepperoni
6 ounces finely shredded Italian Cheese Blend
60 mini pepperoni (optional)
1.       Preheat oven to 425 degrees and spray cavities of a muffin pan with cooking spray.
2.       Remove pizza dough from packaging and allow it to come to room temperature on a floured surface. Using a rolling pin or your hands, roll out into a thin layer.
3.       Using either a round cookie cutter or a clean glass, cut rounds out of the dough. You want the circle to be slightly bigger than the size of the muffin cup.
4.       Using your fingers, stretch the dough without tearing and press into muffin cups.
5.       Place a pepperoni at the bottom of the cup. This will help prevent it from getting soggy.
6.       Next place about 1/2 to 1 teaspoon of pizza sauce on top of the pepperoni.
7.       Add Italian cheese blend (as much or as little as you like).
8.       If you want more pepperoni, either chop some of the larger up or use mini ones like the kind I found at my grocery to store.

9.       Bake for 12-15 minutes, depending on your oven, until cooked through, dough is golden brown, and the cheese is melted and bubbly.

5. Cranberry and Mustard Kielbasa


1 (16 oz.) can Ocean Spray Jellied Cranberry Sauce
2 tbsp. spicy brown mustard
1 tsp. lemon juice
1 lb. fully cooked smoked sausage, tiny cocktail franks, or kielbasa


In a saucepan, mix together cranberry sauce, mustard, and lemon juice. Cook, stirring constantly over medium low heat, until smooth and heated. Remove casing from sausage and cut into 1/2 inch slices. Stir sausages into cranberry sauce; heat to boiling, reduce heat, simmer 10 minutes. Serve warm.

6. Buffalo Chicken Dip

FRANK'S® REDHOT® BUFFALO CHICKEN DIP

1 pkg. (8 oz.) PHILADELPHIA cream cheese, softened
1/2 cup FRANK'S® REDHOT® Original Cayenne Pepper Sauce or FRANK'S® REDHOT® Buffalo Wings Sauce
1/2 cup blue cheese or ranch dressing
2 cups shredded cooked chicken.
1/2 cup crumbled blue cheese or your favorite shredded cheese

DIRECTIONS:
PREHEAT oven to 350°F.
COMBINE all ingredients in a 1-quart baking dish.

BAKE 20 min. or until mixture is heated through; stir. Serve with bread, crackers or vegetables.

Everyday Eye Makeup

Hello! For Therapeutic Thursday, I want to share some everyday makeup looks for your eyes. It can be hard to find looks that are appropriate for school or work and that are easy to achieve. These 3 looks will make you look effortlessly put together in no time!

1.


For this look, use a light brown shimmer eye shadow on your lid and a darker matte brown on your crease and blend. Use a champagne glitter eye shadow in the crease and along the lash line. Use liquid brown eyeliner for your upper lash winged liner and a nude pencil eye liner for your water line. Finish off with clear natural mascara.

For this look, use a shimmery plum eye shadow all over the lid and lower lash line, and blend the edges. Use black cream liner on the upper lash line and black pencil liner on the bottom. Finish with a black lengthening mascara.

Apply black gel liner to the upper lash line, smudging the outer corner. Apply nude liner to the lower lash line and apply volumizing mascara.

The Selection

Hello! Today for Wicked Wednesday I want to share one of my favorite young adult books with you: The Selection by Kiera Cass. Not only do the author and I share the same name, but the book is fantastically written and so addicting. Unlike every other teen novel, the book doesn't follow the same tried and true forbidden romance/teen beast/insiders versus outsider routine. The story carves its own path and tells about interesting plots and multifaceted characters.



The story follows America Singer, a teenager living in a caste kingdom, as she is chosen to compete for the prince's heart against 34 other girls from provinces across the nation. America is torn on what to do, believe, and feel because she has to leave behind her love, Aspen, but wants to help her poor family with their monetary issues. She has to live in the castle and survive the violent attacks against the kingdom while struggling to fit in with her fellow competitors and her new life and fight her growing feelings towards the prince.

It may sound cheesy at first, but my explanation doesn't do it justice. America is a witty, fiery character that loves hard and fights hard and you want to root for her throughout her journey. The girls are catty, the men are handsome, and the grandiosity of the lives of the elite leaves you wanting more. The selection is part one of Cass' trilogy with The Elite, and The One (out May 6th). Also, Cass released two novellas and a compilation book with extra material. I highly recommend this book and the series because it is written so originally and creatively and I think our inner princesses live vicariously through America in her journey.

How To Do A Handstand

Hello! Today I found a pin on Pinterest on how to do a handstand and I was really intrigued to try it. The pin shows you a few steps to ease yourself into a handstand. I have yet to try it, but I feel like it will work. These exercises will definitely help tone your body and the handstand itself helps as well.

In addition to these exercises, the pinned website recommends adding 3 sets of 10 shoulder presses to your workouts until you can press half of your body weight or more. Push ups, pike push ups, and pike push ups with a medicine ball help as well. Also, it recommends keeping your focus between your hands and keeping your body parallel. Breathing calmly and deeply makes you balance more too!

Top 6: Cold Weather Wear

Hello! In honor of the recent polar vortex and the freezing weather that swept across the Midwest and Northeast this week, I figured I would post about some cute clothes for the subarctic temperatures!

To prevent frost bitten skin, make sure you wear gloves! It can be tempting to lose the gloves in the winter when you have cozy pockets in your jacket and are furiously texting away on your smartphone, but these gloves keep you warm and allow you full use of your touch screen. They're soft and useful!

Chocolate Lava Cakes

Hello! So, for Foodie Friday I have a delicious treat: Chocolate Lava Cakes! These are seriously the best, most chocolatey cakes I have ever had. A coworker of my mother gave her the recipe nearly ten years ago and I've been in love with it ever since. Basically it's heaven for chocolate lovers. Here's the recipe!



1 stick of butter, cut into pieces
4 oz bittersweet chocolate, coarsely chopped
3 large eggs
1/2 cup sugar
1/3 cup all purpose flour

preheat oven to 400 degrees
butter and lightly flour 6 ramekins
melt butter in a small saucepan. Put the chocolate in a small bowl, pour the butter on top and stir until smooth. In a bowl using an electric mixer, beat eggs with the sugar at medium speed until thick and pale. Beat in the flour, add the chocolate. Spoon the batter into the prepared ramekins. Bake in the center of the oven for 8 to 10 minutes or until the tops of the cakes begin to crack.

Let the cakes cool in the ramekins for one minute, Run a knife around the ramekins to loosen the sides then invert on a dessert plate. Serve the cakes immediately with whipped cream, ice cream or fresh strawberries.

Lazy Girl Hairstyles

Hello! So if you're like me, you give yourself twenty minutes every morning for so because you value sleep more than anything else and you're in a mad rush to look presentable at school. As much as I love to look good at school, I can't bother to straighten or curl my hair in the morning, unless it's some type of dress up or picture day. I make my hair look decent with these 3 quick and easy hairstyles. In honor of midterm week, I thought I'd show you how to dress your tresses for success in less than 3 minutes.

1. Half Up, Half Down Twist



For this hairstyle, all you have to do is take a chunk of your hair (I prefer using a small one) and twist it away from your face until you reach the back of your head. Then secure with two bobby pins and do the same on the other side and you're done!

2. The Gibson Tuck

The Gibson Tuck.

To be honest, I had no idea this style actually had a name and I was shocked to find a picture of it on the internet because I kind of thought I came up with it. *shamefully acknowledges naivety* So, first, you twist back a small chunk of your hair on either side of your head and pull your hair back into a low ponytail. Secure the ponytail loosely and then split the ponytail above the elastic in half. Roll your ponytail up and then stick it through the hole you created above the elastic and tuck it in firmly. I suggest placing bobby pins in to secure it tightly. Loosen your hair around your face and on the back of your head and you're done!

3. Ballerina Bun



For this look, put your hair in a high ponytail and secure it. Then, split the ponytail in half a twist the pieces in on themselves. Take one of the pieces and wrap it in a bun formation around the other piece. Then take the other piece and wrap it the opposite way around the bun. Secure it with bobby pins and you're done!

Hello! So today I have a serious abdominal workout and as you can tell by its title, it is intense. I've been looking for an intense core workout for a while because I got bored of my old routine. This one is a lot of work, but I think it gives good results.

Frozen

Hello! It's Monday and you know what that means! Movie Monday! I may be seventeen, but I'll always have Disney in my heart, so when I saw Frozen this weekend, I was so happy. I wasn't really sure what to expect when I saw it. I had heard good things, but I was afraid that people were building it up too much. Thank God that wasn't the case.

For those of you who have been living under a rock, Frozen is about a young queen born with powers of freezing anything with the touch of her palm, who leaves her kingdom because she lost control and revealed her sorcery at her coronation ball. Her younger sister believes that she could bring her back unharmed and sets on a journey to find her. It really was a great movie. I'd say it was the best Disney movie since The Lion King, my favorite movie of all time. I would definitely recommend seeing it if you haven't already. It's up for several awards this season, including Best Animated Picture and Best Original Song at the Oscars.

Delta Rae

Hello! So, for the first Song Sunday ever, I thought I would feature a relative newcomer: Delta Rae. They are an American folk rock band that formed at Duke University in 2009. The band is made up of 3 siblings: Ian Hölljes (vocals and guitar), Eric Hölljes (vocals, guitar, piano and keys) and Brittany Hölljes (vocals), as well as Elizabeth Hopkins (vocals), Mike McKee (percussion) and Grant Emerson (bass guitar). They released their self-titled EP in 2010 and released their debut album Carry The Fire in 2012. On November 19th, they released the EP Chasing Twisters and plan to release a second album later this year.

I came across their single "Run" and I love it. It has such an upbeat tune and positive lyrics that make it very catchy. I hope more people hear how awesome Delta Rae is so they become successful and make it on the radio. I think it is only a matter of time before they become mainstream. Maybe "Run" will be one of the songs of the summer! You should definitely visit their website. They are on tour right now until the end of April, so if you can, check them out. Therapeutic Thursdays is beauty tips, tricks, and inspirations. Whether its hair, makeup, or home remedies, you'll find it here.

Foodie Fridays are about, you guessed it, FOOD. This probably will be my favorite because I am in love with food. I will also review restaurants, recipes, and food trends.

And finally, Stylin' Saturdays are about clothing trends, in season fashion, looks for less, and cool clothing stores.

Please forgive me for my cheesy titles, I promise you will love the content. I am so excited to start up this blog and I hope you enjoy it.
