The Best Muffins Ever

Baking is my life. I can't live without the sugary sweetness of brownies, the gooey warmth of cookies, and the heartwarming of muffins. A few years ago, my sister bought banana chocolate chip muffins at a bake sale and my life changed. Those muffins were so good that we have been trying to recreate them since then. After countless episodes of trial and error, I found the recipe for muffins that taste exactly how I remember those muffins tasted. It seriously is heaven in a paper liner. You need to try these muffins . . . your happiness depends upon it.

Banana Chocolate Chip Muffins
(makes 12)

1 1/2 cups all purpose flour
2/3 cup sugar
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1 cup mashed ripe bananas (about 2 large)
1 large egg
1/2 cup unsalted butter, melted
1/4 cup milk
3/4 cup semisweet chocolate chips

  1. Preheat oven to 350°F. Line twelve 1/3-cup muffin cups with foil muffin liners.
  2. Mix flour, sugar, baking powder and salt in large bowl. Mix mashed bananas, egg, melted butter and milk in medium bowl. Stir banana mixture into dry ingredients just until blended (do not overmix). Stir in chocolate chips.
  3. Divide batter among prepared muffin cups, filling each about 3/4 full.
  4. Bake muffins until tops are pale golden and tester inserted into center comes out with some melted chocolate attached but no crumbs, about 32 minutes. Transfer muffins to rack; cool.

Chocolate Lava Cakes

Hello! So, for Foodie Friday I have a delicious treat: Chocolate Lava Cakes! These are seriously the best, most chocolatey cakes I have ever had. A coworker of my mother gave her the recipe nearly ten years ago and I've been in love with it ever since. Basically it's heaven for chocolate lovers. Here's the recipe!

1 stick of butter, cut into pieces
4 oz bittersweet chocolate, coarsely chopped
3 large eggs
1/2 cup sugar
1/3 cup all purpose flour

preheat oven to 400 degrees
butter and lightly flour 6 ramekins
melt butter in a small saucepan. Put the chocolate in a small bowl, pour the butter on top and stir until smooth. In a bowl using an electric mixer, beat eggs with the sugar at medium speed until thick and pale. Beat in the flour, add the chocolate. Spoon the batter into the prepared ramekins. Bake in the center of the oven for 8 to 10 minutes or until the tops of the cakes begin to crack.

Let the cakes cool in the ramekins for one minute, Run a knife around the ramekins to loosen the sides then invert on a dessert plate. Serve the cakes immediately with whipped cream, ice cream or fresh strawberries.

This is the most delicious dessert ever. I definitely recommend trying it! For more deliciousness, follow this blog for food posts every Friday and follow my Pinterest for even more food!
